Fall is right around the corner and with that, I usually start baking more. Banana bread is an all-time classic that is great for breakfast or an afternoon snack. I firmly believe however that with a few ingredient changes classic recipes can be way healthier. Keep reading for my spin on the classic ….Protein Banana Bread.
Aloha Protein Banana Bread
1 1/3 cup Oat Flour
2 scoops Vanilla Syntha 6 Protein Powder (about 120g)
1 Cup Splenda
1 1/4 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Cinnamon
4 egg whites
1 cup mashed banana (2-3 depending on size)
1/4 cup water
1/4 cup applesauce
1/4 cup chopped walnuts
Preheat the oven to 350
Mash up the banana first making sure all chunks are smooth. Then add all dry ingredients, mix together. Once combined, mix in all wet ingredients.
Prepare an 8×4 inch loaf pan with spray or parchment paper.
I also use a mini loaf pan and line with parchment paper. Picture below.
Bake for 40-50 minutes. Depends on your oven, the bread is done when a fork comes out clean and the top is brown.
